Prepare the sauce: Place 5 tomatoes, 4 serrano chiles, a small amount of chile de árbol, half an onion, and 3 garlic cloves in a pot with water and bring to a boil.

Cook the rice: In another pot, combine 2 cups of rice (or 0.5 kg), 4 cups of water, a small piece of onion, 4 garlic cloves, and a pinch of salt. Cook until the rice is fully cooked.

Fry the cheese: Heat oil in a pan and fry the cheese until golden. Remove and drain excess oil.

Grind the sauce: Once the tomatoes and chiles are softened, blend them together with the onion and garlic until smooth. Taste and adjust salt as needed.

Cook the chile sauce: Bring the ground sauce to a boil, add the fried cheese, and simmer together briefly.
