Ingredients
Pork ribs
1½ kg
Onion
Use in two parts: one for cooking with meat, one for sauce
~1 medium
est.
Nopales (prickly pear cactus pads)
~1 lb
est.
Tomatoes

Serrano peppers
6
Garlic cloves
2 cloves for pepper mixture, 3 cloves for sauce

Black peppercorns
A handful
~1 tsp

Salt
~1½ tsp
est.
Water
~6 cups

Steps

Place the pork ribs and onion in a pot, add water and salt, and begin cooking.

While the pork cooks, chop the nopales into small pieces. Boil water in another pot with onion and salt, then add the nopales and cook until tender.

Combine 6 tomatoes, 6 serrano peppers, 3 garlic cloves, and onion to prepare the sauce.

Grind the black peppercorns and 2 garlic cloves together with salt, then add a splash of water.

When the pork is partially cooked, add the pepper and garlic mixture, allowing the meat to absorb the flavors and brown.

Drain the cooked nopales and add them to the pot with the meat.

Grind the tomato, chili pepper, and onion mixture into a sauce.

Add the prepared red chili sauce to the pot with the meat and nopales, and simmer until all flavors are well combined.

Cook until the pork is fully tender and all flavors are well developed. Serve with refried beans, rice, or on its own.
