This melt-in-your-mouth orange cake is bursting with citrus flavor. The secret is rubbing the zest into the sugar to release the oils, then adding plenty of fresh orange juice and a hint of vanilla. Finished with a sweet orange glaze for extra flavor.

Ingredients

Vanilla extract~1 tspest.
Flour~2 cupsest.

Butter or oil~½ cupest.
Powdered sugar (for glaze)Mixed with orange juice to make the glaze~1 cupest.

Rub the orange zest into the sugar to release its natural oils and boost the citrus aroma.

Combine the orange sugar with the remaining cake ingredients (flour, eggs, butter, fresh orange juice, vanilla extract, etc.) and mix just until combined. Avoid over-mixing so the cake stays light and delicate.

Pour the batter into a cake pan and bake until golden brown on top.

While the cake is still warm, brush or pour over an orange glaze made from powdered sugar and orange juice, letting the cake soak up the syrup.

Let the cake cool slightly, then slice and enjoy.
