Prepare the chestnuts by boiling them and draining well. Transfer to an oven and roast until cooked through, turning and cutting them partway through to ensure even cooking.

Chop the shallot finely and mince the garlic. Clean the shiitake and baby bella mushrooms by washing and draining them thoroughly, then cut them into pieces.

Bring a pot of salted water to a boil and cook the pasta until al dente (approximately 12 minutes), then drain, reserving some pasta water.

In a pan, heat olive oil and cook the pancetta until crispy, then remove and set aside.

In the same pan, sauté the mushrooms until soft and fragrant.

Add the shallot and garlic to the pan and sauté until fragrant. Pour in a splash of white wine to deglaze.

Combine the cooked pasta with the mushroom mixture and roasted chestnuts. Add butter and cheese, stirring gently until well combined. Use reserved pasta water to adjust consistency if needed.

Season with salt and black pepper to taste. Top with additional Pecorino Romano cheese and serve hot.
