Combine roasted tomatoes, jalapeños, garlic cloves, onion quarter, tomato sauce, and seasonings in a blender with 4 cups of water and blend until smooth.

Heat oil in a pot over medium heat, add fideo noodles, and constantly stir for about 5 minutes until golden brown.

Remove the toasted fideo from the pot and set aside.

Add a jalapeño and onion quarter to the pot and sauté for a couple of minutes.

Add ground beef, break it apart, mix in seasonings, and cook for about 3 minutes until browned.

Add medium potatoes and carrots, mix well, and cook for 5 minutes, then drain excess grease.

Stir in a jalapeño and corn.

Pour in the blended tomato sauce, add another cup of water, mix well, and bring to a simmer, then taste and adjust seasoning as needed.

Fold in the reserved fideo noodles and calabacita squash and stir.

Garnish with cilantro, cover the pot, and simmer for 8 to 10 minutes until potatoes are tender, then serve.
