Accurately measure flour—3.5 cups or 420 grams total. Use a scale or measure by fluffing flour and leveling the cup without scooping. Divide into two portions: 1.5 cups (180g) and 1.75 cups (210g).

Pour 1 cup whole milk (heated to about 110°F) into the stand mixer bowl. Warm the bowl with hot water if needed. Add 1 packet of instant yeast and stir.

Add the first portion of flour (180g) to the mixer bowl. Using the paddle attachment, mix on medium-low speed for about 1 minute until everything is well combined.

Add softened butter (5 tablespoons or 71g) in tablespoon-sized portions. Then add sugar (3 tablespoons), 1 egg, and salt (1 teaspoon).

Mix on medium-low speed for about 1 minute until all ingredients are fully combined.

Switch to the dough hook attachment. Add the remaining flour (210g). Mix on medium speed for about 2 minutes until the dough begins to come together.

Test the dough's consistency by touching it with a clean finger. If it sticks to your finger, it's too wet. Gradually add flour (1 tablespoon at a time) until the dough is slightly tacky but doesn't stick to your finger.

Continue mixing on medium speed for about 2 minutes until the dough balls up around the hook and develops good structure.

Transfer the dough to an oiled bowl, turning it to coat all sides. Optionally add fresh herbs, cheese, or roasted garlic for flavor variations. Cover with a damp cloth or plastic wrap.

Let the dough rise in a warm place (such as a preheated 100°F oven or an oven with the light on) for 45 minutes to 1 hour until doubled in size.

Once the dough has doubled, gently punch it down. Lightly flour the work surface and turn the dough out onto it.
