Pour the milk into a small saucepan, add the cinnamon, and heat over medium-high heat for about 6 minutes until it nearly simmers, then set aside.

In a stand mixer, combine the shortening, sweetened condensed milk, and sugar; beat on medium-high speed for 5 minutes.

Reduce to low speed and mix in the vanilla, baking powder, and salt until incorporated.

Alternate adding the masa and the hot milk one cup at a time, then increase to medium-high speed and mix for 15 minutes until a dough forms.

Divide the dough into two equal portions, about four and a half cups each.

Keep one portion of dough in the mixer, add the pineapple preserves and crushed pineapple, and mix for 5 minutes to make the pineapple dough; remove and optionally stir in coconut flakes.

Return the second portion of dough to the mixer, add the strawberry pie filling, and mix for 5 minutes to make the strawberry dough; optionally stir in raisins.

Take a soaked corn husk, spoon about two tablespoons of dough onto it (spreading it thin first if adding extra filling), then fold and wrap the husk closed.

Repeat the wrapping process until all the dough is used up.

Arrange the wrapped tamales upright in a steamer pot, adjusting the arrangement to fit the pot size.

Cover the tamales with extra corn husks and a kitchen towel, cover the pot, and steam over medium heat for 55 minutes.

Carefully remove the tamales once cooked (they will be very hot) and let them rest for 5 to 10 minutes to set.

Unwrap the tamales from their husks and enjoy, ideally with a glass of milk or coffee.
