Traditional Italian crispy, thin waffle-like cookies baked in a special pizzelle iron. Can be enjoyed plain or decorated with powdered sugar and colored sprinkles.

Combine the flour, baking powder, and salt together.

Using an electric mixer, beat the room temperature eggs for about two minutes until they begin to become foamy.

Gradually add the sugar a little at a time, continuing to beat until well combined.

Mix in the olive oil.

Add the almond extract (or vanilla extract) and mix well.

Gently fold the dry ingredients into the wet mixture by hand, being careful not to overmix so the almond extract flavor is preserved.

Preheat the pizzelle iron. Using a small spoon, place a spoonful of batter in the center of the machine and gently close it without pressing too hard to avoid splashing batter.

Wait for the light indicator to change from green to red and back to green, indicating the pizzelle is done.

Carefully remove the baked pizzelle and place on a cooling surface, letting it cool slightly while still soft rather than completely crispy.

If desired, add colored sprinkles for decoration (especially for children) while the cookie is still warm, or dust with powdered sugar after cooling.
