Steps

Cut the chicken into small bite-sized pieces and season thoroughly with New Mexico chili powder, ground cumin, salt, and black pepper until evenly coated.

Heat a pan over medium-high heat and add oil or lard. Once hot, add the seasoned chicken and cook for about 5 minutes until fully cooked through.

Remove the cooked chicken and set aside. Add a bit more oil to the same pan, then add the diced onion and jalapeño, stirring for about 2 minutes.

Add the minced garlic and cook for about 30 seconds until fragrant.

Add the calabacitas and roasted poblano peppers to the pan. Season with salt, mix well, and cook for another 2 minutes.

Stir in the tomatoes, sweet corn, and tomato sauce, mixing well and cooking for about 2 more minutes.

Return the chicken to the pan, mix well, then reduce heat to medium, cover, and simmer for 5 minutes.

Turn off the heat, top with Queso Oaxaca, cover, and let the cheese melt.

Transfer to serving plates and enjoy. Can be served with rice or as a filling for tacos.
