Place 2 kg of chicken thighs and drumsticks in a pot of water with a piece of onion, 2 garlic cloves, and salt. Cook until the chicken is fully cooked through.

Rinse the guajillo chiles and remove the seeds. Lightly toast the chiles in a pan to enhance their flavor.

Soak the toasted chiles in warm water until they soften.

Roast the tomatoes, remaining 2 garlic cloves, and onion over the heat until charred and softened. Allow to cool.

Add the allspice berries, cumin, and cloves to the soaked chiles and roasted tomato mixture. Let the spices infuse as it cools.

Remove the cooked chicken from the broth and drain. Lightly brown the chicken in oil in a separate pan, being careful not to overcook it.

Blend the cooled chile, tomato, garlic, and onion mixture into a smooth sauce.

Pour the blended sauce over the chicken. Add the reserved broth from cooking the chicken and season with salt to taste.
