Steps

Bring a large pot of water to a boil, add the onion and chicken along with a little salt, and start simmering.

While the broth simmers, peel 7 potatoes and cut them into large chunks (not too small or too big). Add them to the pot from the start so they hold their shape instead of falling apart.

Add one cup of rice to the pot and let everything cook together until done.

Once the soup is cooked, remove the onion and blend it until smooth (no need to strain).

Add a can of chipotle chiles along with some broth into the blender and puree into a sauce.

Pour the blended chile sauce back into the pot, add a little more water, and let it come back to a boil to finish the soup.

Serve hot in bowls, optionally topped with avocado, for the best flavor.
