Deveined and seeded, lightly toasted then soaked in water

Bring water to a boil in a pot, add 1.5 kg of pork and a little salt, and cook until the pork is fully cooked.

Devein and seed 7 black chiles (pasilla), lightly toast them, then soak in a small bowl of water to soften.

Separately roast 7 tomatoes, 3 garlic cloves, and a chunk of onion until fragrant.

Add the roasted tomatoes, garlic, and onion into the bowl with the softened chiles, and let them sit together to combine flavors.

Once the pork starts to brown, add a tablespoon of lard to enhance the flavor.

Once the chiles and tomatoes have cooled, blend them together with some of the pork cooking water and a pinch of salt into a smooth sauce.

Pour the blended chile sauce into the pot with the cooked pork, mix well, and simmer until the pork absorbs the flavors.
