Place the pork in a pot with a pinch of salt and water, and cook until fully tender.

Meanwhile, roast the tomatoes, serrano chiles, onion chunk, and garlic on the side until nicely charred.

Scoop out some of the cooking water from the pork and reserve it, then add lard and sliced onion, browning the pork until golden.

Cut the roasted tomatoes a bit to help the blender, then blend them with the roasted onion, garlic, a pinch of salt, and the reserved pork broth into a sauce.

Once the pork is nicely browned, pour in the blended red sauce, rinse the blender with a little water and add that too, then let everything simmer until well combined.

In another pot, heat lard, fry a serrano chile until fragrant, then add the cooked beans and fry them together as a side dish.

Once the pork in red chile sauce is rich and well cooked, remove from heat and serve with the fried beans, white or red rice, and warm tortillas.
