Prepare the pouting fillets and season lightly with salt, pepper, and flour.

Dip the seasoned fish in beaten egg, then coat thoroughly with breadcrumbs.

Heat oil in a pan and fry the breaded fish fingers, resisting the urge to move them around constantly. Cook until golden brown, using visual cues and sizzling sounds to gauge doneness.

Wash the sweet potatoes thoroughly, halve them, then quarter each half, and carefully cut into wedges.

Season the sweet potato wedges with salt, pepper, and smoked paprika. Drizzle with olive oil and toss to coat evenly.

Spread the sweet potato wedges on a baking tray and roast at 180°C (350°F) for 35-40 minutes, stirring halfway through, until they are golden and crispy at the edges.

Make basil mayo by bashing fresh basil and mixing it with mayonnaise and lemon juice. Taste and adjust seasoning.
