Ingredients
Pumpkin
Used instead of traditional cauliflower, pressure-cooked until soft
~500 g
est.
Cooking oil
a little
Salt
~1 tsp
est.
Fresh ginger
~1 tbsp
est.
Green chili
~1-2
est.
Tomato
~2-3 medium
est.
Pav bhaji masala spice blend
~2-3 tbsp
est.
Tomato puree
Gives the dish a beautiful vibrant color
~3-4 tbsp

Water
~1 cup
est.
Chili flakes
~¼ tsp
est.
Bell pepper
~1
est.
Butter
~2-3 tbsp
est.
Lemon
Adds flavor along with the butter

Pav bread rolls
~4-6

Steps

Pressure cook the pumpkin until very soft and tender, using it as the main vegetable in place of the traditional cauliflower.

Heat a small amount of oil in a pan, then add salt, fresh ginger, and green chili, sautéing until fragrant.

Add the tomato and mix well, then stir in the pav bhaji masala spice blend.

Add the softened pumpkin to the pan and mash it slightly with a spatula so it blends well with the sauce.

Pour in the tomato puree to give the dish a vibrant color; note that the pumpkin adds a slightly sweeter taste compared to potato.

Add some water and mix, adjusting to the desired consistency, then let it simmer gently.

Add chili flakes and chopped bell pepper for extra heat and texture.

Take the pav bread rolls, spread butter on them, and toast on a griddle or pan until golden and slightly crisp.

Before serving, squeeze a little lemon juice over the bhaji for extra brightness, and serve alongside the toasted pav bread.
