Cut chicken into bite-size pieces and pat dry with paper towels.

Season the chicken with salt, black pepper, and all-purpose flour, ensuring an even coating.

Blend roasted green chiles, roasted tomatillos, minced garlic, chicken bouillon, oregano, cumin, thyme, and coriander until smooth.

Heat oil in a pan over medium-high heat and sear chicken pieces for about 1 minute per side until golden brown; repeat in batches.

Reduce heat to medium-low, add more oil, and sauté the diced onion for about 1 minute.

Add the chile verde sauce and 1.5 cups of water, season to taste with salt, and bring to a simmer. Return chicken to the pan, mix well, and simmer for 15 minutes over medium-low heat.
