Sort and rinse the pinto beans, removing any broken beans or debris. Place in a fine mesh strainer and rinse thoroughly.

Transfer beans to a pressure cooker with 2 garlic cloves, 1 jalapeño, 1/4 onion, salt, black pepper, oregano, and cumin. Cover with water to the max line (about 10 cups). Close and pressure cook on high for 50 minutes.

Mix corn masa, flour, salt, and baking powder in a bowl. Add shortening and crumble with your hands. Gradually add hot water while mixing until the dough is hydrated but not sticky. Knead for a couple minutes until smooth, shape into a ball, and cover with a damp towel to rest.

Roast poblano peppers over a flame or hot burner on all sides until blackened. Transfer to a sealed container or Ziploc bag to steam. Simultaneously roast Roma tomatoes, 1/4 onion, and jalapeño or Serrano peppers until charred.

Transfer roasted tomatoes, onion, and peppers to a blender. Add 2 garlic cloves, cumin, chicken bouillon or salt to taste, and 1/4 cup water. Blend until smooth and set aside.

Peel the blackened skin off the poblano peppers, remove the stem and seeds. Cut into strips and then halve lengthwise.

Heat oil in a pan over medium heat. Add the sliced onion and cook for a couple minutes until softened.

Add the prepared rajas, season with salt, and cook for another 2-3 minutes.

Pour in the prepared salsa (rinse the blender with a little water to get all of it), stir, and bring to a simmer. Taste and adjust seasoning. Simmer for another 3 minutes until sauce reduces.

Add the cheese cubes, turn off heat, cover, and allow the cheese to melt.

Using a tortilla press with cut Ziploc bag pieces, divide dough into equal 50-gram balls (if using a scale). Place in the center, cover with plastic, and press evenly.

Carefully remove each tortilla from the plastic and place on a hot comal. Cook for 25 seconds, flip, cook 30 seconds, flip again, press the center to puff, and cook 10-15 seconds more. Transfer to a kitchen towel and repeat with remaining dough.

To serve, place beans with broth in a bowl, top with the rajas con queso, and serve with warm tortillas. Optionally add a fried egg.
