Ranch-Style Carnitas Huaraches with Molcajete Salsa
Oval-shaped Mexican masa boats filled with grilled carnitas beef, refried beans, cheese, and roasted cactus paddle, topped with a spicy tomato and chile salsa made in a molcajete.

Heat a griddle or comal with a little oil and fry the beans, gently mashing them with a spoon until they become crispy.

On another part of the griddle, place the tomatoes, chile de árbol peppers, onion, and garlic with a little water to cook until softened.

Cut fresh cactus paddle into strips and grill on the comal until cooked.

Heat oil on the griddle and sear the beef slices with salt and pepper until browned. Grill onion slices on the side until golden.

Grind the cooked tomatoes, chiles, onion, and garlic in a molcajete to make a spicy salsa.

Take a portion of masa, make a small indentation, fill with refried beans, and cover with more masa, shaping it into an oval boat. Cook on the griddle until golden on both sides.

Top each cooked boat with salsa, cheese, grilled beef, cactus, and onion. Add extra salsa if desired for more heat.
