Steps

Heat lard in a cast-iron skillet over medium-high heat. Once melted, add the sliced beef and season with salt and black pepper. Cook until the meat is well-browned on all sides.

Finely chop the cilantro and onion and set aside.

In a skillet or on a griddle, add a bit of lard and place a tortilla on it. Flip the tortilla, then add melting cheese on top.

Layer the browned beef, minced onion, and cilantro over the cheese.

Cover with another tortilla. Transfer this stack to the griddle, place another tortilla on top, flip it, and add more cheese. Cook until the cheese is melted.

Flip the completed sandwich onto the meat side and keep warm. Repeat the process to make additional quesadillas as desired.

Remove the quesadilla from the skillet and top with homemade salsa.
