Soak the broad beans in water overnight; the next day, rinse them well and place them in a pot along with the soaking water.

Once the water is boiling, add a sprig of cilantro, half an onion, and the beans; season with a little salt and let simmer until tender.

In a separate pan, heat some oil and sauté finely chopped onion and garlic until fragrant.

Dice the nopales into small squares, add them to the sautéed onions, sprinkle a little salt, and let them cook down in their own natural juices until soft.

Once the nopales are cooked, remove them and set aside; also take the onion piece out of the bean broth and discard it.

Heat oil in another pan, then add the chopped spring onions and cook until lightly browned.

Dice the tomatoes; once the spring onions are golden, add the tomatoes with a little salt and cook until they soften and release their juices.

Once the tomato mixture is ready, stir it into the cooked broad bean broth.

Add the previously cooked nopales into the soup as well.

Sprinkle in the chopped cilantro, then add the sliced pickled jalapeños for extra flavor.

Let the soup simmer a little longer so all the flavors meld together, then it's ready to serve.
