Gather and prepare all ingredients including the 1 kg of cubed beef, fresh nopalitos, tomatillos, onion, black pepper, cumin, dried chiles, garlic, tomatoes, and cilantro.

Heat a large pot of water. Chop the nopalitos and add them to boiling water along with tomato and onion pieces to reduce the slimy texture. Add salt and let them cook until tender.

On the side, lightly roast the tomatoes, onion, garlic, and dried chiles over heat until charred and fragrant, being careful not to burn them.

Let the roasted ingredients cool, then grind them together in a molcajete or food processor until smooth to create the sauce.

In a separate pot, heat a little oil and add the cubed beef pieces, seasoning with salt.

Grind the cumin and black pepper together in a molcajete until fragrant and well combined.

Sprinkle the ground cumin and black pepper onto the browning beef, allowing it to develop color.

Drain the cooked nopalitos and add them to the beef pot along with sliced onion.

Pour the prepared red chile sauce into the beef and nopalito mixture. Add the Puya chiles for additional flavor.

Add fresh cilantro and let everything simmer together to allow the flavors to meld beautifully.

Taste and serve the finished beef with nopalitos, optionally accompanied by refried beans and fresh tortillas.
