A fruity raspberry vinaigrette that elevates any leafy salad. Particularly delicious with caramelized goat cheese or feta cheese salads. This dressing emulsifies beautifully and keeps refrigerated for several weeks, making it perfect for batch preparation.

frozen raspberries100 g
mustard1 tsp
white wine vinegarchampagne vinegar can be used as alternative100 ml
salt10 g
sugar or honeyor 1 heaped tsp honey10 g
black pepperfreshly ground, to taste~½ tspest.
mild, fruity olive oil200 g
cold-pressed rapeseed oilor use only olive oil if preferred50 g

Combine water, frozen raspberries, mustard, vinegar, salt, sugar, and black pepper in a blender.

Blend until fully emulsified, starting from the bottom and gradually moving upward.

Pass the emulsified dressing through a fine sieve to remove raspberry seeds.

Transfer to a clean bottle, label it, and refrigerate. Shake before use. Keeps for several weeks.
