Ingredients

achiote paste

ground cumin

oregano
1 tsp
black pepper

brown sugar
to balance acidity

freshly squeezed orange juice (or 100% juice)
1 cup
freshly squeezed lime juice

apple cider vinegar

oil

steak (ranchera, flap meat, skirt steak, or diezmillo)

Add the onion, garlic, salt, chili powder, achiote paste, cumin, black pepper, brown sugar, and oregano to a blender.

Add the orange juice, lime juice, and apple cider vinegar, then blend until smooth.

Open the blender, add the oil, and give it a quick blend to combine — the marinade is ready.

Place the steak in a container, pour the marinade over it, and make sure every piece is well coated.

Cover and refrigerate, marinating overnight or for at least 4 hours.

After marinating, let the meat rest for at least 1 hour to come to room temperature.

Shake off excess marinade, place the meat on a hot grill, and cook to your desired doneness.
