Ingredients

Steps

Toast the puya chiles in a hot pan until they begin to blister, then transfer them to a pot of hot water to soften.

Meanwhile, roast the tomatoes, onion, and garlic cloves over heat until tender.

Place the chicharrón in a plastic bag and crush it by hand until finely ground.

Separate the egg whites from the yolks and beat the whites until they form stiff peaks, adding a pinch of salt.

Add the egg yolks and two tablespoons of flour, continuing to beat, then fold in the ground chicharrón mixture.

Spoon the mixture into hot oil and fry until golden on both sides, turning once.

Grind the roasted tomatoes, chiles, onion, and garlic together to create a sauce.

Pour the chile sauce into a hot pot with oil, add a little water, and bring to a boil.

Add cilantro sprigs and the pre-cooked nopales to the sauce.

Gently place the fried fritters into the simmering sauce and cook until heated through.
