Gather all ingredients including passion fruit pulp, sugar, ginger, lime, and water. Bruise the ginger slices by tapping them with the heel of your knife to release the flavor.

Pour the passion fruit pulp and sugar into a pot.

Add the bruised ginger slices and the juice from half of the lime.

Add water and turn on the heat. When small bubbles start appearing around the edges of the pot, turn off the stove.

Let the mixture cool and steep for about an hour, allowing the sugar, ginger, and passion fruit flavors to fully infuse the water.

Strain the mixture through a fine sieve to remove the ginger and pulp, keeping the syrup. Add the juice from the remaining lime half and stir well.

To make the juice, mix the syrup with cold water in a 1:1 ratio. For example, 4-5 cups of syrup mixed with 4-5 cups of water creates 8-10 cups of juice.

Pour the juice into containers and refrigerate until chilled. Do not dilute with ice; let it chill naturally in the fridge.
