   Select fresh chestnuts carefully, checking each one for cracks, soft spots, and blemishes. Choose chestnuts with a nice shine and hard shell. Set aside any that show damage or defects.

   Wash the selected chestnuts thoroughly and allow them to dry completely.

   Score each chestnut with a knife cut on the shell. This is crucial to prevent them from bursting in the oven. Make a small slit on the top or side, deep enough to let steam escape during roasting.

   Place the scored chestnuts in a pot of hot water and soak them for about 10 to 15 minutes.

   Drain the chestnuts and spread them on a baking sheet in a single layer with space between each one, not crowded together.

   Remove the chestnuts from the oven and place them on a board or plate to cool slightly. Cover with a damp cloth and let them cool for about 10 minutes while still warm.

   Once cooled enough to handle but still warm, peel away the outer shell and the inner brown skin. The chestnut kernel inside should come out white and clean.
