Preheat oven to 450°F. Prepare a large roasting pan.

Remove the 3 to 4 lb roasting chicken and ensure it's not ice cold. Let it warm to room temperature, then drain any juices from the cavity. Pat the chicken dry with paper towels.

Using clean hands, carefully lift and separate the chicken skin from the meat without tearing it. Be sure to lift the skin around the thighs as well.

In a small bowl, combine unsalted butter and olive oil. Melt in the microwave at 50% power.

Chop the fresh tarragon leaves (discard stems) and stir into the melted butter mixture. Add salt and cracked black pepper, and mix well.

Rub the butter mixture all over the chicken, under the skin and on top, covering the breast and thighs. Use a spoon to distribute it into the cavities.

Arrange a bed of sliced onions around the bottom of the roasting pan. Place the halved garlic inside the chicken cavity along with 3 sprigs of thyme.

Squeeze lemon juice all over the chicken. Place lemon halves and any remaining lemon slices in the cavity. Arrange the remaining 3 sprigs of thyme around the onions.

Fold the wings under the body to prevent burning. Tie the legs together with kitchen twine to ensure even cooking.

Place the prepared chicken in the oven at 450°F. Once the door closes, reduce the temperature to 425°F. Roast for about 1 hour 15 minutes to 1 hour 30 minutes, or until golden brown and a meat thermometer inserted into the thickest part reads 165°F. Baste the chicken with its pan juices every 30 minutes.

When the chicken is fully cooked, remove from the oven. Let it rest for about 20 minutes so all the juices are reabsorbed into the meat, ensuring it remains tender and juicy.
