Ingredients
Sabudana (tapioca pearls / javvarisi)
Soaked in water until fully softened
~1 cup

Water
~2 cups

Sugar syrup (for cooking the balls)
Used to boil and finish the shaped balls
~2 cups

A little ghee or oil
Applied to hands to prevent sticking while shaping balls

Steps

Soak the sabudana (javvarisi) thoroughly in water until every grain is fully swollen and soft.

Transfer the soaked sabudana into a wide vessel without draining, then mash it into a thick, dough-like paste.

Take a portion of the mashed mixture in your hand and check that it is firm enough (not too wet) to be rolled into balls.

Grease your palms lightly with oil or ghee, then roll the mixture into evenly sized small balls, repeating until all the mixture is shaped.

In a separate pot, prepare and bring a sugar syrup to a boil.

Gently drop the shaped sabudana balls into the boiling sugar syrup and let them cook on low heat for about 5 minutes.

Stir gently with a spoon to prevent the balls from sticking to the bottom of the pot or to each other.

Continue cooking until the balls turn translucent and are fully cooked through with a soft texture, then turn off the heat.

Let it cool slightly before serving this soft, fluffy sabudana sweet.
