Salted Egg Minced Pork with Pickled Cucumber
A quick and satisfying home-style steamed pork dish. Minced pork with pickled cucumber is mixed with salted egg yolk, steamed, then topped with a raw egg for extra richness.

1
Prepare one salted egg and one raw chicken egg. Mix the salted egg directly into the ground pork instead of separating the yolk or adding it only at the end, as many recipes do.
2
Add water and white pepper to the meat mixture to taste, then mix thoroughly by hand with the salted egg until the added water is fully absorbed and no longer visible.
3
Steam the mixed pork, using a slightly lower temperature than a full boil so the steaming time is a bit longer — this keeps the meat tender instead of tightening up and becoming tough under high heat.
4
Insert a chopstick into the meat and twist it out — if no meat sticks to it, the dish is fully cooked.
5
Steam for about two more minutes to let the flavors meld, then serve this savory, rice-pairing dish.
