Chop the scallions into small pieces and set aside.

Add a generous amount of oil to the pan, turn to low heat, and slowly cook the chopped scallions until softened and fragrant.

While cooking, keep an eye on the white parts of the scallion since the green parts cook quickly. Cook the white parts until slightly softened to bring out their sweetness.

Once the scallions are softened, add the minced garlic and grated ginger. Don't use too much ginger or the sauce will turn dark and look unappealing.
