premium dark soy sauce1 tsp

Chinese cooking wine or Shaoxing wine1 tbsp

Slice the pork against the grain into thin slices for quick and even cooking.

Add white pepper, light soy sauce, oyster sauce, dark soy sauce, sugar, Chinese cooking wine, and water to the pork. Mix well with your hands until the liquid is absorbed.

Add cornflour and mix thoroughly, then add sesame oil and mix well. Let sit for 10 minutes.

Heat a wok over medium heat. Add 2 tbsp of sesame oil, then add the young ginger and half of the spring onions. Stir-fry until fragrant.

Add the chopped garlic and mix well until it begins to turn golden brown.

Pour in the marinated pork, spread it out, and stir. Cook for about 1-2 minutes until no pink remains.

Add 100 ml of water and use a spatula to scrape and distribute the pork evenly. Add more water if the sauce is too thick for your preference.

Stir well, add the remaining spring onions, and mix again. Finally, splash in 1 tbsp of Chinese cooking wine and stir to combine.
