Mix the black sesame powder, milk (or unsweetened soy milk), chicken stock, soy sauce, black vinegar, sugar, chili oil, garlic paste and doubanjiang together to make a rich sesame sauce.

Finely chop the garlic, scallion, and chili pepper.

Stir-fry the ground pork in a hot pan, then add the chopped garlic, scallion, and chili. Season with sake, sugar, soy sauce, and oyster sauce, stir-fry until fragrant, and finish with a pinch of white pepper.

Boil the thin noodles until cooked, then rinse under cold water to chill and drain well.
