A delicious sheet pan frittata featuring seasonal zucchini, perfect for brunch gatherings and meal prep. Sautéed zucchini and onions are combined with eggs and cheese, then baked until golden and cooked through. Easy to prepare and serves a crowd of 12 to 16 people.

Prepare the ingredients: select small to medium zucchini and thinly slice them, then add yellow or red onion; chop hard cheeses like cheddar, Swiss, or provolone. Avoid fresh mozzarella as its high water content can make the eggs runny.

Sauté the zucchini and onion in a little olive oil, seasoning with salt to build flavor layers. Cook until the vegetables develop color and soften, then set aside to cool completely.

If using a nonstick sheet pan, lightly oil the bottom and place it in a preheated 375°F oven; if using stainless steel, line it with parchment paper to prevent sticking. Allow the pan to preheat for about 10 minutes.

Crack 16 eggs into a large bowl and whisk them thoroughly with milk, freshly grated Parmesan cheese, the cooked and cooled zucchini and onion mixture, and the chopped cheese. Stir well and season with salt and pepper to taste.

Pour the egg mixture into the preheated pan and bake in a 375°F oven for about 30 minutes or until golden brown and cooked through.
