1
Chop the four green onions into small pieces, keeping the stem and leafy parts separate as they will be used at different stages of cooking.
2
Cut the asparagus into small pieces.
3
Cut the shrimp into small pieces and marinate with salt, sugar, and crushed black pepper; mix in sesame oil and combine evenly.
4
Crack and beat the eggs together. Set aside.
5
If using freshly cooked rice, allow it to cool until no visible steam remains before using.
6
Add oil to a hot pan over medium-high heat. Once hot, add the green onion stems and briefly sauté to release their aroma.
7
Add the shrimp and stir-fry until all pieces turn orange in color.
8
Add the asparagus and stir-fry for another 15 seconds; then remove the shrimp and asparagus from the pan and set aside.
9
Add a little more oil to the pan if needed, then add the rice and stir-fry to break it up into individual grains.
10
Pour in the beaten egg and mix with the rice while stir-frying. Continue cooking until the egg is fully cooked and the rice is loose without any large clumps.
11
Season with salt and mix well.
12
Add the cooked shrimp and asparagus back to the pan along with the green onion leaves and black pepper; quickly toss everything together and serve.
