Finely mince the garlic and chop the green onions into small pieces, keeping the stem and leafy parts separate as they will be used at different stages of cooking.

Prepare the peeled shrimp and marinate with salt, sugar, white pepper powder, and cornstarch. Mix well, then add sesame oil and mix again.

Separate the egg whites from the yolks. Beat the egg whites until foamy, add salt and a touch of oil, and beat further. Then add the yolks and beat together thoroughly—this technique makes the scrambled eggs fluffier.

Heat oil in a pan over medium-high heat, add the marinated shrimp and the stem parts of the green onion. Spread the shrimp out evenly and let the green onion sizzle in the oil to release its flavor into the shrimp.

Pan-fry until the bottom of the shrimp is slightly golden brown, then flip and continue cooking until the other side is also slightly golden brown.

Add the minced garlic and mix with the shrimp, then stir-fry for a moment longer to release the garlic flavor.

Reduce heat to low, add a little more oil, and pour in the beaten egg mixture. Immediately and gently push the egg from the edges toward the center of the pan, continuing until no liquid egg remains.

Once the scrambled eggs are set, sprinkle the leafy parts of the green onion on top and serve.
