Mix together all dry seasonings in a bowl: black pepper, flavor rice, all-purpose seasoning, garlic powder, onion powder, and smoked paprika.

Divide ground beef into portions of 3–4 oz each, sprinkle the seasoning blend over them, and gently work it in so flavors penetrate every part of the meat.

Gently roll each portion into a ball and set aside.

Slice onions very thinly.

Heat avocado oil in a skillet to medium-high heat.

Place the meat balls in the hot skillet at medium-low heat and place sliced onions on top of them.

Use parchment paper and a plate, spatula, or smashing tool to firmly press the meat down flat and thin.

Cook until the edges brown and moisture beads form on top, then flip the burger to caramelize the onions.

Adjust heat to medium while cooking, being careful not to overcook so the burger stays juicy.

Combine mayonnaise, Maggi seasoning, Dijon mustard, pickle juice, ketchup, and seasoning powder in a bowl to make the burger sauce.

Place American cheese slices on the burger near the end of cooking.

Butter the brioche buns and toast them on high heat until golden.

Spread sauce on the toasted bun and place the cheese-topped burger on it.

Spread sauce on the other side of the bun.

Top with 2 pickle pieces and cover with the top bun to finish.
