1
Break the pasta in half and place it in a microwave-safe bowl. Add enough water to completely submerge the pasta.
2
Add salt and olive oil, then stir gently. Cover with plastic wrap and microwave at 600W for 7 minutes. This prevents the pasta from sticking together and seasons it as it cooks.
3
While the pasta is cooking, prepare the vegetables: remove the ends from the cucumber and rub to release bitterness; cut into thin strips and pat dry. Peel the carrot and julienne it. Slice the onion thinly and soak in water with a splash of vinegar for about 5 minutes to reduce the pungent flavor. Julienne the ham into thin strips.
4
After 7 minutes, carefully remove the bowl from the microwave and open the plastic wrap. Stir the pasta thoroughly, then add the carrot. Cover again with plastic wrap and microwave at 600W for an additional 2 minutes.
5
Prepare the sauce by combining mayonnaise, ketchup, vinegar, sugar, soy sauce, and milk in a bowl. Mix thoroughly until the sugar fully dissolves.
6
After the additional 2 minutes, remove the bowl carefully. Drain the pasta and carrot thoroughly. Immediately add the soaked onion and stir well—combining the hot pasta with the onion further mellows the onion's bite. Allow the mixture to cool completely before proceeding.
7
Once completely cooled, add the pasta mixture to the sauce, followed by the ham and the pat-dried cucumber. Toss everything together well. Taste and adjust the seasoning with salt if needed.
