Crispy spam fritters made with a light, airy batter created using ice-cold carbonated liquid. This classic British comfort food became popular during World War II and remains beloved today.

Ingredients

Spamsmall tin, cut into 2-3 slices1 can

ice-cold non-alcoholic lager or soda water150 g

Remove the spam from the small tin. Cut off both ends of the can, then use the tin itself as a cutter to slice out 2-3 even, consistent pieces of spam.

Sift the flour through a fine mesh sieve into a bowl. Add the cornstarch.

Add baking powder and turmeric, using your fingers to work through any lumps. The turmeric adds both flavor and a golden color to the batter.

Pour the ice-cold carbonated liquid into the bowl and gently mix with a spatula to a smooth batter, being careful to retain the carbonation. Cover the bowl with a shower cap.

Pour about 2 inches of cooking oil into a pan or wok over medium heat.

Coat each spam slice in salt-seasoned flour, tapping off any excess. The flour helps the batter adhere properly to the spam.

Dip the flour-coated spam pieces into the batter, ensuring they are fully submerged.

Heat the oil to between 140–150°C (280–300°F). Test the temperature with a small amount of batter.

Carefully lower the fritters into the hot oil. After 2-3 seconds they will float to the top, showing there is plenty of gas in the batter. Keep turning them regularly to ensure even browning, cooking for about 6 minutes until golden brown.

Once golden brown, remove the fritters and place them on kitchen paper to absorb any excess oil.
