Spicy Korean Stir-Fried Pork (Dwaejigogi-bokkeum: 돼지고기볶음)

Preheat a large skillet or wok over medium-high heat.

Add the pre-cut pork belly to the hot pan.

Add the gochujang, soy sauce, sugar, hot pepper flakes, ground black pepper, and sesame oil. Stir gently to combine and begin cooking evenly.

Add the minced ginger and garlic, then continue stir-frying to ensure even cooking throughout.

Add the thinly sliced onion and stir-fry until it becomes tender.

Add the green onion pieces and continue cooking. For a slightly crispy texture, keep cooking for a few more minutes until the edges of the pork and vegetables become lightly caramelized.

Cook for a total of about 15 minutes until the dish appears glossy and juicy with the pork fully cooked.

Transfer to a serving plate and garnish with sesame seeds and perilla leaves if desired.
