Spicy Stir-Fried Ground Pork with Pickled Vegetables

Remove the pickled vegetables from the jar using clean utensils, and dice them along with any mushrooms. Prepare minced garlic and ginger by grinding or chopping finely.

Heat the wok over medium heat for about 1.5 minutes. Add olive oil and let it heat thoroughly, then add the ground pork.

Let the meat brown on one side without constantly stirring. Season with salt and white pepper. Continue stir-frying until the ground pork is fully crumbled, most liquid evaporates, and the surface shows light browning.

Add the minced garlic, ginger, and chili flakes. Pour in chili oil if using, and stir quickly to combine.

Add the diced pickled vegetables and mushrooms, stirring quickly. Clear a space in the center of the wok and pour the pickling liquid onto the hot surface to bloom its flavor, then mix everything together.

Keep the heat steady and let the pork absorb most of the sauce, but don't let it dry completely. Leave some liquid to serve alongside the rice.

Just before removing from heat, add the chopped scallions and toss to combine.
