Australia's favourite dip! A French onion dip with spinach stirred through, served in a hollowed-out crusty cob loaf. This retro classic must be made using instant French onion soup powder—no making it from scratch! A gloriously unfashionable dish that is perfect just the way it is.

French onion soup mix powder40g/1.4oz, full salt (not low salt)1 pack
cream cheesefull fat250 g
sour creamfull fat, or 250g tub plus yogurt or extra mayo to top up300 g
mayonnaisewhole-egg or Kewpie½ cup
frozen chopped spinachthawed (microwave recommended), excess water squeezed out250 g
cob loafcrusty round bread, preferably sourdough, about 25cm/10" wide. Sourdough preferred as it's sturdier. If using soft white bread, toast it: brush inside of bowl with melted butter, spread bread pieces with olive oil and pinch of salt, 10–15 min at 180C/350F (160C fan) until lightly browned1 piece

Place cream cheese in a bowl, break into roughly 8 chunks, microwave on high for 30 seconds, then mix until smooth and loose like sour cream. Add soup powder, sour cream, mayonnaise, and thawed squeezed spinach; mix well. Refrigerate for 3 hours (remove 1 hour before serving).

Cut the lid off the bread, then hollow out the interior by cutting a ring, scoring, and pulling out chunks. Pour the dip into the hollowed loaf and serve with the bread pieces plus extra crackers or chips on the side (you'll finish the bread before the dip). Enjoy fighting over the sauce-soaked bread bowl!
