Clean the chopped turkey wings with lemon juice and vinegar. Coat them with oil, salt, paprika, all-purpose seasoning, black pepper, and curry powder.

Blend the onion, garlic cloves, spring onions, and bell peppers into a fresh aromatics paste. Add this mixture to the turkey wings and mix well. Let the turkey wings marinate for 10 to 15 minutes.

Heat oil in a pot and add brown sugar, allowing it to caramelize over gentle heat. Watch as it darkens to a rich brown color.

Add the marinated turkey wings to the caramelized sugar, cover the pot, and leave undisturbed on medium-high heat for 2–3 minutes to allow the meat to brown and release its juices.

Stir the turkey wings, cover again, and continue cooking on high heat until all the released liquid evaporates and the meat begins to fry in the bottom of the pot.

Once the liquid has evaporated, add tomato ketchup and additional thyme. Mix the water with the seasoning blend, then pour into the pot.

Add the whole Scotch bonnet pepper to the pot for flavoring without excess heat. Cover and continue simmering.

After about 30 minutes of cooking, remove the Scotch bonnet pepper to prevent it from bursting. Continue simmering on low heat for about an hour until the turkey is tender and the sauce is thick and rich.

Serve the stewed turkey wings in a bowl, garnished with fresh parsley if desired. Accompany with rice, beans, and salad.
