1
Slice each chicken breast into two thinner pieces to ensure even cooking. If the thickness is uneven, place between baking paper and gently pound with a small pan to even it out.
2
Season the chicken pieces with salt and set aside.
3
Prepare the marinade by combining mayonnaise, minced garlic, soy sauce, and rice vinegar in a bowl.
4
Add the chicken to the marinade and coat well. Let marinate for a minimum of 20 minutes, or ideally overnight.
5
While the chicken marinates, prepare the sauce by mixing together light soy sauce, dark sweet soy sauce, brown sugar, rice vinegar, sesame oil, and additional minced garlic.
6
Heat a large stainless steel or carbon steel pan on high heat for 3-4 minutes until very hot. Test with a water droplet—it should roll around like marbles on the pan surface.
7
Add oil to the hot pan, then place the marinated chicken pieces in the pan.
8
Season with black pepper. Reduce heat to medium and continuously flip the chicken every minute or so for 8-10 minutes until a beautiful golden crust forms. Spoon any remaining marinade over the chicken as it cooks.
9
Pour in the prepared sauce and continue flipping the chicken until the sauce becomes glossy and thickly coats the chicken pieces.
10
Optionally add a pat of butter for extra richness. Turn off the heat and let the chicken rest in the pan for about 5 minutes.
11
Slice the chicken and verify it is cooked through and juicy inside. Serve with rice, sliced cucumber, and optional chili on the side.
