Prepare the bell peppers: press the stem down with your thumb, cut them in half, remove the stem and seeds, then cut into bite-sized pieces.

Prepare the onion: cut it into approximately four pieces, then chop into bite-sized chunks.

Prepare the ginger: peel it and mince finely.

Prepare the garlic: remove the germ (which can taste bitter and burn easily), then mince finely.

Combine seasonings: mix the miso paste, soy sauce, mirin, and sugar together until well blended.

Heat sesame oil in a pan, add the minced garlic and ginger, and stir-fry until fragrant.

Add the ground pork and onion, stir-frying together until the meat is partially cooked.

Add the doubanjiang and stir-fry together until the meat is cooked through.

Add the bell peppers and toss quickly to combine, stir-frying for about 30 to 40 seconds.

Pour the miso sauce mixture over the ingredients and stir-fry for about 1 minute until everything is well coated with sauce and the peppers are vibrant in color.
