Wash and drain the garlic scapes. Cut off the flower-like tips at the top, then cut the stems into about 2-inch pieces. Bite-test for tenderness; discard any tough parts.

Heat 3 tablespoons of cooking oil in a pan over medium-high heat. Stir-fry the tips first for about 1 minute.

Add the stem pieces and stir-fry occasionally until all parts become tender and slightly wrinkled, about 7 minutes. The scapes should turn an olive-green colour.

Cook for another minute, then pour in 1/4 cup soy sauce and reduce heat to medium.

Add about 3 tablespoons of rice syrup (or honey or sugar) and stir well to add shine and sweetness.

Continue stir-frying until the sauce is completely evaporated, making the scapes more chewy and glossy, about a few more minutes.

Drizzle with a little sesame oil and transfer to a serving bowl. Top with sesame seeds and optional shredded red pepper as garnish, and serve with rice.
