Prepare all vegetables by cutting the carrot into julienne, leek into small pieces, onion into chunks, mushrooms into slices, chili into sticks, spring onions into chunks, and cilantro into sections.

Beat the eggs with a pinch of salt. Cook them on low heat with a little oil as very thin omelettes, about 1 minute 30 seconds per side. Stack and roll the thin omelettes, then cut into strips for a firm, chewy texture.

Drop the dried noodles into boiling water over high heat. Begin loosening them as they soften; thin noodles will float to the surface after about 2 to 2½ minutes. Drain and toss with 1 tablespoon vegetable oil to prevent sticking.

Heat the wok over high heat with 3 tablespoons vegetable oil. Add the garlic and ginger, stirring occasionally for about 2 minutes until they begin to take color — this creates the flavor foundation.
