Stir-Fried Sweet Potato Noodles With Chicken

Stir-fried sweet potato noodles combined with marinated chicken, fresh vegetables, and sesame oil seasoning. High-heat cooking allows the noodles to absorb moisture and flavor from the vegetables, resulting in a tender yet chewy texture.

Soak 300g of sweet potato noodles in warm water (around 45°C) for 30 minutes until softened.

Cut 300g of chicken into bite-sized pieces after removing the skin.

Place the chicken in a bowl and add salt, ground pepper, light soy sauce, dark soy sauce, cornstarch, and 1 tbsp vegetable oil. Mix well and let rest briefly.

Prepare all vegetables: chop Napa cabbage and mushrooms into pieces, julienne the carrot, cut bell pepper and onion into chunks, slice spring onions into sections, mince garlic, and grate the ginger.

Make the seasoning sauce by combining 2 tbsp light soy sauce, 0.5 tbsp dark soy sauce, 2 tbsp oyster sauce, 0.25 tsp salt, and 0.25 tsp ground pepper.

Drain the rehydrated noodles. Heat 2 tbsp vegetable oil over high heat, add half of the ginger and minced garlic, stir until fragrant, then add the marinated chicken pieces.

Cook the chicken for 1 minute 30 seconds, then remove it (allowing one side to develop color). Return to the pan and stir well for another 1 minute 30 seconds, then set aside.

In the same pan, heat 2 tbsp vegetable oil and add the remaining ginger and garlic. When fragrant, add the onion and stir for 30 seconds, then add the carrot.

After cooking the carrot for 1 minute, add the Napa cabbage, spring onion sections, bell pepper, and a pinch of salt. Stir-fry over high heat for 2 minutes to allow the salt to help vegetables release their moisture quickly.

Add the drained noodles, seasoning sauce, and cooked chicken. Continue stir-frying for 3 minutes so the noodles absorb the vegetable moisture and become tender. If your vegetables are particularly dry, add 100ml of water as needed.

Be careful not to overcook the noodles as they will become mushy. Finally, add the toasted sesame seeds, spring onion, and 1 tbsp sesame oil. Mix briefly and remove from heat.
