This incredible strawberry bread is packed with fresh strawberries both inside and on top. It's a simple stir-together batter, with the trick being to use just enough flour to hold everything together and to coat the strawberries so they don't sink. While it bakes, whip up an easy strawberry icing made from just strawberries and sugar mixed into a beautiful pink glaze.

Ingredients

Fresh strawberriesDiced, some dusted in flour to prevent sinking~1½ cupsest.
FlourJust enough to hold the batter together and coat strawberries~2 cupsest.
Sugar~1 cupest.

Steps

Stir together the basic batter ingredients until just combined.

Toss the diced fresh strawberries in a light coating of flour so they don't all sink during baking.

Fold the floured strawberries into the batter, reserving some to top the loaf.

Pour the batter into a loaf pan and bake until fully cooked through.

While the bread bakes, mix strawberries and sugar together until you get a smooth pink icing.
