Wash the strawberries carefully in cold water and dry them thoroughly with kitchen towels. Using a small knife, carefully remove the green leaf portion—do not wastefully cut off the entire top.

Cut approximately three-quarters of the strawberries into large cubes and set aside some whole ones for decoration. Marinate the cut strawberries with sugar and a squeeze of lemon juice to enhance their aroma.

Place mascarpone in a bowl and add half the powdered sugar, vanilla paste, and lemon zest. Stir gently by hand using a silicone spatula or whisk until smooth—never use an electric mixer, as over-whipping will cause the mascarpone to become runny.

Use cold heavy cream with at least 32% fat content. Start whipping at low speed, then increase to medium speed. Once the cream begins to thicken, add the remaining powdered sugar and continue whipping until glossy and just slightly stiff—do not over-whip.

Gently fold about one-third of the whipped cream into the mascarpone mixture to lighten it. Gradually fold in the remaining cream in batches, using gentle folding motions to keep the mixture airy.

Quickly dip each ladyfinger into the milk-cocoa mixture, turning once, and remove immediately—they should still feel firm, as they will absorb the liquid as the tiramisu sets.

Line the bottom of a 27×18 cm dish with a layer of dipped ladyfingers. Spread half the mascarpone cream mixture over them, arrange the marinated strawberries, spread another layer of cream, and place another layer of dipped ladyfingers on top.

Spread the remaining mascarpone cream mixture evenly over the top. Cover and refrigerate for at least 2 hours to allow the ladyfingers to absorb the liquid and soften evenly.

Remove the tiramisu from the refrigerator. Lightly dust with unsweetened cocoa powder. Grate the dark chocolate over the top and garnish with fresh strawberries and mint leaves if desired.
