Split yellow gram (chana dal)soaked for 2 hours~1 cupest.

Steps

Cook the soaked split yellow gram in a pressure cooker with water and salt for 2 whistles until tender but maintaining shape. Drain excess water and set aside.

Heat oil in a pan, add green chili, ginger, and asafetida, sauté until fragrant. Mix in cooked lentils and spices until well combined. Finish with fresh cilantro.

Thoroughly mash the boiled potatoes until smooth with no lumps. Mix in salt, black pepper powder, cornflour, cumin powder, and a little oil until well combined and non-sticky.

Shape a portion of potato mixture into a cup, fill the center with spiced lentil filling, seal carefully, and gently press into a flat patty ensuring no cracks form.

Shallow fry the patties in hot oil over medium heat until golden brown and crispy on both sides. Drain excess oil on paper towels.

Serve hot with green chutney or tomato sauce as a side, or use in chaat dishes, sandwiches, and burgers.
